Before Niu Grillz ever had a name, I was going through one of the hardest seasons of my life. My mother had recently passed, and to be honest, I was looking for something — anything — that felt like a blessing. I needed a sign that things could still grow, even after loss. And somehow, through smoke and fire and a whole lot of faith, this place became that blessing.
It all started humbly. Every month, I would sell smoked meat at the local rock market — just me, a smoker, and a dream that I wasn't sure would ever become anything more. But people kept coming back. They kept asking when I'd be there next. That small spark of motivation, that little bit of encouragement from the community, eventually led me to open a restaurant right here at the Fiji Club. And looking back now, the growth has never felt forced. It has been organic, the way real things usually are.
I would be lying if I said I did this alone. Along the way, I was fortunate to have the late Freeman Grok walk beside me. He wasn't just a mentor in business — he helped shape the values that still guide this kitchen today. He taught me that how you treat people matters just as much as what you serve them. I carry those lessons with me every single day.
My father used to say, "Your word is always your own contract." That is the standard I try to live by. We value genuineness here — not perfection, not pretense, just real people doing real work. I can't promise you something extravagant or mind-blowing. What I can promise you is a meal. A real, organic, genuine taste of our culture, mixed with the experience of everything we have learned along the way.
Everything I have is a blessing. This kitchen, the team beside me, the guests who walk through our doors — none of it is taken for granted. If you are reading this, I hope you know you are welcome here. Not as a customer, but as part of this story.
